Crispy and tender zucchini cooked with a golden crust of freshly grated Parmesan, thyme and oregano. These Italian flavored zucchini sticks are a sliced pleasure. Best served hot out of the oven with a little red sauce or served with red sauce or tztaziki sauce to soak. Vegetarian and gluten-free.

Zucchini, also called zucchini, are treated like a vegetable, but they are actually fruits! They are a variety of summer pumpkin in the family of pumpkins.

Nutrient-rich zucchini is one of my favorite ingredients, and they are almost always on my shopping list. They are easy to work with and there are many tasty ways to enjoy them.

What is the best way to eat zucchini?

First of all, let me say, when you are in season, you can eat sweet taste zucchini of raw meat with just a touch of salt and a drizzle of good extra virgin olive oil. But there are several ways to cook zucchini:

Stew. As a hearty vegetarian main dish like ratatouille or Briam Grilled.

Grilled zucchini, finished with a little lemon juice and fresh herbs is one of my favorite fried salads.

If you ever have zucchini to use on a given night, this recipe will be useful! Your working time is up to 10 minutes, and all can be ready in 25 minutes or less.

These oven-roasted zucchini are soft inside but firm and crispy slices outside. And you'll love the Italian touch: a crispy golden brown garnish of grated Parmesan cheese and an Italian seasoning with fresh thyme and oregano.

Let me tell you, when I made those zucchini sticks the other night, they were finished before we could put them on the table! Fortunately, they are healthy.

How long to cook zucchini?

It will depend on how you cut zucchini and the temperature of the oven. I recommend cutting zucchini into thicker spears, in this way you are sure not to overcook and keep its crunch. At 375 degrees F, it will take about 15-20 minutes to cook.

zucchini Ingredients

  • 3 to 4 zucchini cut and cut lengthwise into nice quarters sticks

  • ½ teaspoon sweet paprika It has used this paprika

Here are some Instructions:

  • Heat the oven to 350 degrees F. In a bowl, mix the grated Parmesan cheese, thyme and spices until well combined.
  • Prepare a large baking sheet covered with a metal grid for baking like this. Lightly brush the baking sheet with extra virgin olive oil (or use a healthy baking spray). Place the zucchini sticks, peel down, on the baking shelf and brush each zucchini with extra virgin olive oil
  • Sprinkle the parmesan thyme on each zucchini Zucchini Bake in hot oven for 15 to 20 minutes or until tender.
  • Then, for a golden crispy garnish, roast for 2-3 more minutes, observing carefully.
  • Serve immediately as an aperitif with a side of tzatziki or hummus to dive! Or serve it as a side of the protein of your choice.

How to cook zucchini?

 crispy and delicious zucchini will take about 20 minutes to cook at 350 degrees F. This recipe is so easy to do, here's how:

  • Cut zucchini into spears or thick sticks
  • Put a metal grid or wire rack on a large rimless baking sheet and place the zucchini in a single layer on top of the Brush metal shelf zucchini sticks with good extra virgin olive oil (this is what will help keep the filling and allow zucchini to pass well into the oven).
  • Add the filling. Mix the parmesan, fresh thyme, oregano and paprika in a small bowl, then sprinkle evenly over zucchini spears.
  • To bake zucchini, put the oven at 350 degrees F. It will take about 15-20 minutes. And to add this golden hue, put zucchini under fattening for a few minutes and carefully take care that the filling does not burn.

How do you manage zucchini without being soaked?

Here are 3 tips that make the difference:

Cut the zucchini into thicker spears. You will see in the video below that I basically take a zucchini, cut it into two longitudinal, then each half is cut again creating two spears (or quarters). Because these zucchini sticks are thicker, they stay crispy and you get the perfect bite in the oven.

Use a metal stand for crispy zucchini! Many recipes will make you put zucchini spears directly on a baking sheet. In this recipe, I intentionally add a metal grid (or cooling grid) to the top of the baking sheet. Zucchini sticks are laid out on the metal grid, which allows hot air to circulate freely so that the zucchini sticks do not soak at the bottom. The metal grid essentially ensures better texture and the zucchini will be soft inside while having a firm exterior and crispy exterior.

Avoid overcooking your zucchini! It's easy to overcook them, so set a timer and check your zucchini! You do not want them to release too much water and soak (fortunately, if you cut the zucchini as directed and use a metal grid for cooking, it should help a ton).

Ways to serve sticks from zucchini

Such tasty zucchini is one of those items that can serve a lot of papers on the table. I have some ideas for you:

  • As an aperitif with Tzatziki, hummus or Baba Ganoush.
  • As a starter or side for the Italian evening at this Italian chicken frying pan, meatball soup or spaghetti with this homemade spaghetti sauce and if you have extra sauce, it can serve as a sauce for these zucchini sticks
  • To accompany the barbecue with salmon kabobs, lamb chops, chicken kabobs, Greek burgers or grilled swordfish.
